I'm trying to test load few rounds for deer hunting, I'm not a hunter so it's new to me.

I've got 2 different bullets, both have plastic tips.

    110gr Nosler and 180gr Barnes lead-free copper.

    Lil'Gun powder.

Which one is better for 10" AR, 100yd or closer range, southern IN.

Fast and light, or Slow and heavy?

Both will kill deer from a pistol or sbr in that length. Don't know how fast you can drive that heavy barnes out of a 10" bbl so I'd check with Barnes to be sure it will reliably expand at the velocity you can achieve.
Shot placement is always king. No bullet makes up for poor placement.

I use a 110 grain Barnes TAC-TX out of a 16” barrel and it clocks in at 2600 FPS. I have gotten very good results over the past 3 years. This high velocity projectile doesn’t leave the largest entry and exit wound, but whatever vitals it appears to touch turn into jelly. Deer have been shot between 50-75 yards and have gone about 15-25 yards before dropping.

I can’t speak to what your setup would do, but hopefully having some data points provides insight.

I'd personally stick to lighter bullets for whitetail...the 110gr Barnes is EXCELLENT but the 125gr TMK/TGK, 110/125gr GMX, or 125gr SST would also be good choices.

I'm not sure you can drive a 180 monometal fast enough from a 10" Blackout for any decent expansion.

125 is a hard pill for a deer to swallow. Mine fell over and kicked in a circle a few times from 80 yards. The guides I hunt hogs with in ok won't allow subsonic 300blk on their hunts. That's anecdotal, but these guys stack freezers all year long, I trust them.

We took 3 hogs with a 110 Hornady V-Max bullets hand loaded. The entrance wound was the size of a #2 pencil but the exit wound was the size of a golf ball. Should work really nice on a deer.
