    As a kid I remember my uncle using vinegar and ??? to marinate chicken with and trying to duplicate that flavor.. just throwing this out to INGO instead of googling it.. I remember some peoples posts here about trying and using vinegar so here goes my question to you all. Thanks for all your help. Blessings, tim

    All marinades have an acid component, be it wine, citrus juice, vinegar, etc. No specific info for you, but if you have a marinade that you like to make, substitute some vinegar of your choice into it. Apple cider vinegar should work well.

    that sounds good. Wife just started weight watchers so that will probably work with the point counting thing

    I find it wonderful. Eggplant is an underrated fruit around here, but it grows like wildfire in an Indiana garden.

    I like to cut the eggplant into slices like potatoes. I usually cut them on the thick side. Eggplant is great in kebabs as well--peppers, onions, chicken, lamb, and eggplant!

    Going to pick some up and make some kabob's for the weekend... been experimenting with different ingredients for the wife and I to try. Love all kinds of kabobs.. Looking forward to trying eggplant now. THANKS.

    Grilled eggplant is amazing, and in the colder months, eggplant parmigiana, mmm, mmm, good!

    I may be misremembering, but aren't there barbecue sauces that are vinegar based? Maybe Carolina barbecue?

    My favorite BBQ marinades generally start with balsamic vinegar.
    Then I might add red wine vinaigrette dressing or ketchup and hot sauce.

    My favorite for pork is balsamic vinegar and red wine vinaigrette dressing mixed. Brush it on while grilling and then a little before pulling it off sprinkle on ground coriander seed and dried parsley.

    Not a marinade but for those that enjoy recipes with balsamic vinegar Maggiano's Braised Beef Pappardell recipe. The balsamic cream sauce is very good.

    Back in PA we had what we called "Fire Company Chicken"... A lot of the volunteer fire cos sold chicken BBQ as a fund raiser...

    Basically it's white vinegar, salt, butter, and some distilled water. Put it over your chicken every few minutes and flip regularly.

    Eastern North Carolina BBQ is vinegar and pepper based. It is very good.

    Love me some East NC sauce. I'm from SE VA with roots from NC and I have my family send me packets of sauce mix occasionally. It's a seasoning pack that you just mix in with a gallon of apple cider vinegar. It makes a ton of sauce.
