    These are really thick. We only eat our pork well done, so I will sear both sides then cook covered until done.

    It is an art. Spouse is OK at it. Daughter is the master at chops "ON" the stove.

    ex-wife and ex-GF were both masters at it when I could get them to do it. I would probably have to ruin a few to figure it out.
