    So I found a great deal on an Oklahoma Joes reverse flow High land smoker, got it shipped to my door about $200 cheaper then retail.



    After doing some minor mods to this unit (seal up the fire box and doors with RTV ) and a couple test runs, it was time for a big cook.

    Friday night I took 8 pounds of beef ribs and a 4 pound chuck roast ,covered them in SPG (salt pepper garlic) and then Stubbs bar-b-q rub,and let put them in the fridge overnight. Saterday morning I got them out to come to room temperature before cooking,I also used same Stubbs bar-b-q rub on 2 racks of pork ribs. Let the rub on the pork get tacky,before putting them on the cooker.

    After 3 hours of cruising along at 235F it was time to wrap up food.the pork ribs got treated to vinegar/ hot sauce mix.the beef ribs and chuck roast got treated to butter/onion/ parsley/ beef stock &Worcester sauce . Back on the cooker they go. 2 hours later I unwrapped the pork ribs, pulled the beef ribs (wrapped up in a cooler with towels)

    Made some jalapeno poppers and corn bread.

    The pork ribs were really good. The beef ribs were amazing, but the brisket style chuck roast was the show winner. I may have found a new favorite meal.

    Just finished up a couple slabs myself. Liberally coated in my homemade rub. Smoked for 2 1/2 hours then wrapped and finished for about 2 more hours. Pic is before homemade sauce applied at the end.
