    Specifically, I need prague powder #2 (which contains sodium nitrate). And casing, and whatever else I can find for a new hobby.

    I got mine on Amazon, the brand was Hoosier Hill Farm. When it came in, I realized they are in Fort Wayne, but I don’t think they have a retail presence.

    Maybe I'll email them and see if I can pick it up.


    I've gotten to the point where I hate Amazon. When you buy, it might be from them, or it might be from some fly-by-night. Then, they'll ship it when they feel like it, and it might be in their own truck.


    Seems like If you're not a Prime member, they'll you everything possible to make it so uncomfortable that you'll want to sign up.

    I got a pork belly that I want to make into pancetta; I've already got some pork jowls hanging in the vault next to Mosins.

    I've ordered Prague powder #1 (sodium nitrite) from my regular spice supplier, but seeing that this large cut of meat will be hanging for months, I'd rather have some better insurance against spoilage - sodium nitrate.

    EDIT: And the the price is less than half of that of Hoosier Hill.
