A polymer, striker fired pistol that uses standard 1911 .45 ACP single stack magazines. It would look exactly like a commander size 1911 sans hammer and grip safety, have changeable backs traps for flat, A1 style and beavertail, screw on grips, standard A1 style sights wedged both front and back for personalization / customization. It should have 3 to 6 pound adjustable trigger and available in Coyote, black and od green.
    Variants:

    · Full size
    · Ambidextrous
    · 9MM
    · .38 super
    · .40 Smith
    · Light rail

Sounds like the EAA Witness 1911 Polymer. It matches most of your requirements. I think it only comes black and .45 ACP.

I do like the feel pf the M&P line but comparability is the most important thing to me. The EAA has a hammer so I am guessing it doesn't fit the bill. ETA: the Hudson is a 9MM, so...

I don't think there is a pistol that fits the bill, just wishful thinking.
