First time I asked to look at a handgun at Rural King... Guy wouldn't take the trigger lock off. Claimed it was "state law" to leave it on. I said, "I guess every other shop in the state must be in violation," he said, "yeah, they are." I'm new to IN, but is this an actual law? I can't find it. Because it was impossible to judge the action/trigger that way & they obviously lost a sale...

Yup, store policy. If the price is good enough and you are happy with the trigger from handling it elsewhere that's all you can get from them. They will walk you out of the store with your purchase. You can then load it up if you want to and walk back in and get your popcorn and rabbit food though!

same policy is common among chainstores, pawn shops, etc.
I went to Dicks a while back to buy a rifle on sale and no taking the trigger lock off OR inserting the bolt.
    I casually commented I wouldn't buy a gun I couldn't test the trigger on. IIRC it was a Rem 783 w/scope in 243 for $299

I was also told by a rural king employee that it was a law that the firearm had to leave the gun in a case or or box and the manager had to escort you. The employees there seem to be terribly informed. I stick to an LGS. Heck Rural King won't even sell you a gun if you if you get delayed on your 4473.

Not state law they are wrong or misinformed. As far as the locked case goes that's only if the store is located in a school zone and even then it's just because the ATF agent over the store suggested it. Regardless it's their house so there rules. Like it or not. If not go elsewhere. They are just covering their 6 and protecting a multi million dollar gun selling machine lol. I agree with none of it but like the prices lol.

Is it a thing to bring ammo into a shop, ask to look at a gun and then lock, load and go boom?

If I'm not mistaken, it DID happen, in a Rural King in Illinois just a few years back.
Guy asked to see an AR15, loaded it and started spraying the store.
I believe the current policy was adopted shortly thereafter.

Same thing happened to me at Dunham's a few years ago. They couldn't comprehend why it mattered to me to test the trigger. I'll never buy a gun from them.

I get delayed every time I buy a firearm and have purchased my last 7 pistols from RK with delay. After the usual 24 hour delay after being kicked up to an inspector, I get a phone call and go get it. I usually have to use the free 60 day layaway to buy anyhoo.
