    Looking ahead to winter, I am trying to figure out how to store veggies if we don't eat everything we grow this year. I have thought of trying to can them. Or freezing them. Most of the time, we like our veggies roasted. Easy to do with fresh stuff. I am looking at carrots and potatoes. We don't have a basement nor a cellar. Trying to figure out if I can store them in the garage (uggg - it is FULL) but it does not get that cold as the garage is 1) insulated and 2) my workout area is there, so I don't like it 30 degrees.

    Now is the time to plan. Needing different avenues to explore, ol wise INGO.

    Not for roasting, but I run carrots through a 1/4 veg chopper and dehydrate them. They are great for seasoning meats, soups, stews and such with dehydrated celery and onions.

    Potatoes will can. It's a lot of work vs grocery store potatoes on sale, that themselves will store fairly well in open air.
