Do you keep your front and rear sights "centered" on your gun?
Or do you "move" the front and rear sight until your shots are dead on?

I always adjust the sights on all of my weapons as so that the POA & POI coincide as closely as possible for me with either a particular brand/type of factory ammo or my preferred handload.

    Always.

If necessary, I'll go so far as to alter, or even replace, the front or rear of a set of fixed sights in order to do that. On a few fixed sight revolvers, I've had to resort to turning the barrel in or out a wee bit to get the windage corrected for my eyes and hold.

Personally, knowing that any firearm I take out of my safe can be counted upon to hit where I'm pointing it if I do my part correctly is worth the effort, if only for the confidence and peace of mind it imparts. YMMV. Just my $0.02.

I think the question is more about the exact placement of the sights over the barrel centerline once the sights are adjusted. For example, you might make several adjustments that result in proper aim but the front and rear sight end up being .010" off center to one side or the other. If that is the question I don't think it matters at all.

I always adjust the sight, whatever it takes. Having a gun that the sights are not correct just seems silly.
