We have always eaten them. In fact they were imported by our fore fathers as a food source. They are a non native and if you notice are the first eatable green that emerges in the spring. Poke salad is a staple in the south. Not to mention they are loaded with vitamin and minerals

my tortoises love dandelions. I have tried to grow them, and other than the ones in my yard, I have had no luck. I have asked people how to grow them, and they look at me like I have 12 eyes. My neighbors hate them in my yard, but I didn't buy the house to make friends;)

On U.S. 27, a few miles south of Portland, there is a family that cultivates about 2 acres of dandelion fields. I've never met them, but I've heard they use the dandelions for wine. Really something odd to see while driving down the road.

Cool write up! You should do one of these on a different wild edible plant every couple weeks. Thanks for the knowledge and hope to hear about more wild edibles!
