    Well, I had several pounds of hot peppers from my garden this year & not a clue what to do with them (not really). Some dehydrated, shared some, ate some, and came acrossed a bunch of hot sauce recipes. I mixed and matched a few recipes (generally not a good idea) but fortunately for me it did. My goal was a srirachi like sauce which I halfway achieved thickness perfect color suffered greatly baby poop brown. Lol. Hot bobs sauce is hot real hot with a great flavor. I took 1.7 lbs of japs, habaneros, & a tai peppers, a splash of fish sauce, some salt, some sugar, 4 cloves of garlic and simmer down now for a moment. Then in a separate pan I took 5 pounds of the same pepper combo a heated slightly. Once concoction #1 was mixed or heated for 5 minutes. I added it to the 5 lbs,blended ran through a fine strainer and pow. Hot Bob's homemade hot sauce. Thanks for your time please forgive mylack of grammar. I have 3 children under 4 years old climbing or crying on me.
