    Used food pails, restaurants, delis, school cafeterias, etc. I don't do the mylar bags, just flood with N2, and seal.

    What kind of shelf life are looking at? I was wonding if could do this for the medium term. Are you you using the gamma seal lids or just the regular lids? Where are you getting the liquid nitrogen and how do you use it? Please describe. Is is better than the oxygen absorbers?

    I have a tank of N2 gas, not liquid, you can get a small bottle and regulator from a beer supply or welding supply shop, (I like working with Indiana Oxygen).

    Get the pail clean and dry.
    Drop the N2 tube in the bottom of the pail.
    Slowly fill your pail with the dry goods product. (I fill the pails 3/4 full)
    Open the valve to 5 psi, and let the N2 displace the air for a minute.
    Lid your pails.

    I buy new lids, and in the long run, save lots of time and money not buying O2 absorbers, mylar, new pails, etc.

    Shelf life for up to 4 years is fine, my product doesn't sit that long, we rotate everything in about 18 months.
