It'll probably look good the first year or two but I'd be concerned about frost heave.
The best results i’ve Seen are digging an edge gutter and having deep mulch on top. Looks sharp

My previous house had it when I moved in and I tore it out. Mine didn't age well so I went with the "natural edge."
We have natural edges now... Zero definition. Sucks.
It'd probably take me an entire summer to do our yard manually. We have many many man linear feet of edging.

I used a shovel like this that I bought at Home Depot for around $30.
The trick I found after the first rain is to have a nice deep edge or the mulch ends up out of the bed. Yeah, I was the tard with a broom sweeping my mulch back into the beds.
