    Question for the brisket experts. I have never cooked one of these. A local store has 3 lb flat pieces and I was wondering if these would be ok for smoking. I assume they wouldn't take that long but maybe that works against the concept of low and slow. I may be able to have them cut me a larger one. Any thoughts?

    As long as they didn't remove the fat cap, it should be fine. The reason for low and slow is to break down the connective tissue. I would set at 225 and cook to 203, foil and rest for a while...

    So...... what time is lunch?
    Looks like lunch was last nights dinner. I know in my household there probably would not have been much in the way of leftovers for lunch the next day. We are quite carnivorous.
