If you really expect to do precision shooting beyond 700 yds. then Creedmoor would be my recommendation. (Not withstanding the inherent challenges of precision shooting with a gas gun).
6.5 has a slight advantage in ballistics past 500 yards or so.
308 has a major advantage in selection and availability of ammo/components.
Other than that there's not a whole lot of difference between them.
I would imagine with an AR-10, precision shooting at very long ranges isn't going to be your primary goal, so I would think 308 would be the way to go.
If I was young and did not have 30+ years invested in 308 I'd go with the 6.5 Creedmoor.
If you are already invested in 308 stay with it. Their isn't much difference until 700+ yards accuracy wise.
If it's for hunting 308 will be the better of the two with shots out to 400yds. 6.5 Creedmoor takes over around 500yds.
