I know with some rifles and handguns, dry firing is acceptable. But what about AK-47`s. The bolt does not stay open after the last round, and so the last shot is a "dry fire". Is this hurting anything?

Yup, dry firing an AK variant is not a problem.

Must say, just make sure you are sure beyond a doubt that you are sure the chamber is empty. ;)

No it won't hurt anything on most AKs. The AK is built tough, I have dry fired a few of my builds for hours at a time trying to wear in the FCG.
On most AKs the firing pin goes forward when you release the bolt carrier, so all the hammer hits is the back of the bolt stem.
The only AKs that could have any damage is the ones that have a spring around the firing pin inside the bolt.
