Im trying to figure out which expander plug style would be the best to go from 224 to 6mm. I plan on making what i need on the lathe but is the Lyman m style tge best. Or the good ole tapered plug? Or should i just put a steady long taper on a pin? Any advice is appreciated

It's not a very big jump. Any decent taper will take care of it. I have expanded 223 brass to 264 for my 6.5 TCU using RCBS dies that just have a standard expander with no problem.

Thought about it some more and would a single taper have chance to crush the shoulder than several smaller ones? Say a cone vs a stepped transition? Just thinking out loud here?

The cone taper will be the best option, but your intended necking up isn't that big though. Lube the inside of the neck with your lube of choice or mica if you have it and just run it into your die. What case are you opening up?
