Just like canned tomatoes have more of some nutrients than fresh, peaches are now added to the list of foods that allow you to access more nutrients than fresh. Sweet! Of course, as the article points out, choose peaches packed in their own juices, rather than sugary syrups. Guess I'll need to be canning up some of my peaches this year.
