They don’t (sweet peppers) last that long. Wife cuts them in half fills with sausage stuffing and freeze’s them. They go pretty quick with some marinara sauce n cheese, rice side dish.Picked a large heaping bowl of sweet peppers this morning. Smoked and skinned. Got 6 pints in cool down mode now in the canner. First run was good for sizing information. Now I know about how many jars I can fill with the next picking. May try bell peppers this weekend.
