    I love spicy spicy doesn’t love me so I am in the same boat….. I would help…. I make good chili…. But honestly I measure nothing. Taste as I go starting with basics chili powder cumin sugar tomato meat then I let the tasting spoon lead the way lol so I am here for any of the secrets to peoples amazing chili recipes.

    Approx 2 lbs of meat. 1 1/2 lbs Ground beef, 8 ounces of your favorite breakfast sausage.

    1 tablespoon black pepper
    1 teaspoon red pepper
    1 teaspoon Chili powder
    1/4 teaspoon garlic powder
    1/2 teaspoon salt

    Salt and garlic measures are approx. I just shake some in.

    Green, orange or red mild peppers chopped, about the equivalent of one large whole pepper
    At least 1/2 of a large onion chopped

    Cook the above until the meat is done and the onions begin to clarify, drain excess grease

    Add:

    (3) 8 oz cans of diced tomatoes, drained

    (1) 15.5 ounce can of beans, I use Brooks Mild Chili Beans

    (1) 15 ounce can of tomato sauce, I like the Chile on the thicker side so sometimes I don't use the whole can.

    Bring to boil, then simmer at least 30 minutes. Taste and add seasoning if needed.

    If you really don't like it spicy cut the red & black pepper and chili powder in half before cooking, then you can add more after simmering. What I listed above will have some "bite" around the bottom of a bowl.

    We use LOTS of peppers, onions and tomatoes because we like our chili chunky. You can adjust those to your taste.

    I also use whatever ground meat is hanging out in the freezer. Last batch got a 1/2 pound of chicken pizza sausage that hadn't been used.

    We often have garlic bread with our chili.

    Usually have chopped onion, grated cheese and sour cream at the table when served.

    Add other seasoning if you like.

    We will cook macaroni to serve with the chili, usually to go with the leftovers.

    I always make a batch large enough for leftovers. Every time you reheat it gets better.

    For those that are tired of Red Chili:

    2 Chicken Breast-Baked w/Salt & Pepper, then Shredded
    2 Cans Great Northern Beans
    Small Can Diced Green Chilis
    Aprox Cup & a Half of Chicken Broth (more or less-depending on how thick you want it)
    Envelope of McCormick WHITE Chili seasoning

    Throw all the above in a pot & let it simmer for bout a half hour, then GTG
    For those that want it a bit Spicier-add a diced Jalapeno or shake in some Powdered Cayenne.

    We use Fritos instead of crackers in chili.

    BTW - the stuff they call chili in the Cincy area is awful. It's a tasteless gruel. They consider chili a condiment. Went into one of the chili places and ordered a bowl of chili and the waitress was incredulous. If they don't put it in something else they can't disguise how bad it is.

    @Super Bee - I'll have to try the Coney Island in Fort Wayne next time I'm there.

    This is my competition chili recipe, it has done pretty well. To lower the heat you can just replace the pablanos and jalapenos with more bell peppers, but it really isn't too hot until you add the cayenne pepper. This does make a big pot of chili, like around 2 gallons.

    3 pablano chiles, roasted, peeled, chopped
    3 jalapeño peppers, roasted, peeled, chopped
    2 red bell peppers, roasted, peeled, chopped
    2 yellow onions, peeled and diced
    12 ounces of bacon chopped up
    1 pound fine beef cubes
    1 pound ground beef
    1 pound sausage
    3 tablespoons chili powder
    2 teaspoons cayenne pepper
    2 teaspoons ground coriander
    2 teaspoons ground cumin
    1 Tablespoon granulated garlic
    2 teaspoons granulated onion
    2 teaspoons hot paprika (not smoked)
    2 teaspoons kosher salt
    2 teaspoons freshly ground black pepper
    2 cups tomato sauce
    8 ounces tomato paste
    12 ounces of your favorite beer
    2 cups beef broth
    1/4 cup ketchup
    Worcestershire sauce to taste
    1lb chopped leftover smoked brisket
    4 cans of mixed chili beans

    Fry bacon, onions and peppers until soft
    Remove and drain grease
    Fry sausage, ground beef, and fine beef cubes until browned
    Add all ingredients except beans and brisket and simmer for 1.5 hours
    Add beans and brisket, cook for 30 minutes and serve.

    Sorry but none of us like spicy stuff. But we like chili so......
    It appears, you like Goulash. Traditional Chili has some spice to it, from the chili powder and cayenne pepper.
    Goulash is Chili's cousin, and takes many forms just as Chili does.
    When the Mrs. makes Chili, she leaves out the cayenne, and only adds half of the chili powder for mine. I get extreme acid reflux from spicy.

    Used mild chili mix package. And the best thing for chili is brown sugar. Not a big bean eater so we mostly use macoroni in ours also. I can our tomatoe juice also. Every time someone eats our chili they ask what did you do! This is so good! Brown sugar.

    I had a Texas chili recipe that had cubed sirloin and you cooked it in a Dutch Oven on the grill. I had to quit making it since 40mg Prilosec wouldn't touch it, probably all the chili powder.

    Oh, you wanted a mild recipe. I got nothing.
