Then states that DDS was completed.
It was listed as an infraction.
Am I right to assume this means Defensive Driving School?

Yes, it is the equivalent of a court ordered pretrial diversion program for drunk drivers. Very few counties still offer these, but apparently some still do. It is basically a way to keep a first offense DUI off your record.

DDS = Defense Department Sentrification. It means they have eyes on you for that period of time. Tin foil is useless during those long days and nights.

DADS = Defensive Attitude Delineation Servicing. I'm actually surprised they kept that reference in there. It is usually redacted or they use the abbreviation "REDACTED" to make it look like it was redacted.

I can't say anything more. I've already said too much.
