    Whatcha got going on for Thanksgiving?

    I've got two pumpkin cheesecakes in the oven and was killing time by
    making some chocolate covered caramels (the cheater way)...

    Here's the cheater way to make the candy;
    first you need the chocolate and the caramel.
    These help things go fast:

    Snip a corner off the choc.chips and heat them in the microwave until they melt.
    Use the bag like a pastry bag and squeeze chocolate into candy molds;

    Drop a caramel or two in each one and push them down with toothpicks.
    pick up the mold tray and drop it a couple times on the counter top to take out any air bubbles.
    The caramels won't poke through;

    Stick them in the fridge for about 15 minutes to set...then pop them out;

    Family will be gathering at the patriarch's house. I am taking an heirloom tomato basil salad with fresh mozz. and a roast pear, walnut and feta salad.

    Not cutting the cheesecake until tomorrow...but Mr.Jet licked the mixing spoon and said, "Oh. My. GOD!!" which in layman's terms means "oooh, yummy!!"
    Quality control of the candies says "they're a 'go'." ;)

    I usually just melt the chocolate chips in the bag, snip off the corner, and squeeze the whole mess into my mouth. After I wake up in about 5 hours of being in a sugar coma, I need a drink of milk and a shot of insulin. Love this time of year.

    My brother in law makes pumpkin cheese cake, and it is always delicious. My wife does the layered pumpkin/cheese pie, and it is also great, but very different from the other. But then, I like just about any kind of pie or cheese cake, so my judgement may be a little off.

    That pumpkin cheesecake is AWESOME.
    (Yes, MiniJet and I decided it was perfect "Thanksgiving breakfast food"...it's got eggs in it, after all.)
