You could look at the carbon steel line of wood handled Dexters.Big supplier to the butcher industry. Been in business in Mass. for 200 years.Not as fancy as the high end Wustof or Henckles, but are great quality for the price. Dexter1818.com

+1 on the Victorinox. There is a reason most commercial kitchens and meat processors use them. They work VERY WELL period.

Kind of like the Mora of kitchen knives.

The Goose downtown will sharpen knives (dropoff / pickup) for a few buck and revitalize old knives really well!!! Highly recommended for a mid-quality knife that just needs a reboot.

We just sharpen our own, as long as you know the angle needed it is easy, we mainly have victoronox and wusthoff, been very happy with both
