    How long will home canned stuff be good for? Assuming everything was done properly and no bad stuff. When will the nutritional value of the food go down the drain or taste be to awful to bare.

    We have used canned fruit and veggies that we have had for 5 or 6 years, sometimes the color was a little off, but they tasted just fine. They just need to be kept cool and dry.As far as nutrition, I dont know about that.Most things can be kept way past the time lines that we are told.

    We try not to keep things around for more than a year. We did have 2 jars of salsa we threw out earlier this year as they did not look right.
