I am on my way to learning to build a 1911 from scratch. Step 1 is completed, but step 2 is learning how to work with metal (dremel, filing, etc). What are some projects I can take up to work to that goal? I'd need to start simple and work my way up to more complicated tasks. The tasks need not be gun related, but would have to be something that could be verified as "being correct".

Buy low-cap WASR-10's and make them hi-caps? Would be a fairly easy one, although if you got into doing it often, you'd probably need an FFL to turn them over....

Alternatively, go pick up some scrap metal and make some little desk sculptures. It'll teach you how to work on small, delicate items with metal working tools.

...what was step one if step two is learning how to work with metal?

I would start off by making some 1-2-3 blocks and a matched set of angle blocks, but really depends on what you have access to work with.
