I like to leave most of the settings alone on my dennon. It has some preset's and jazz preset is a little flat for some music but prefect for most.

I did have to adjust the center channel up +3 db to really hear some movies in THX. Music was good and the sound effects were great but the voice track was to soft.

I have 2 towers, a small/medium center and two large bookshelf/small tower type speakers in my current 5.1 setup (I have the side surrounds and spare Sub to upgrade to 7.2 but I haven't got the wires in yet) and I set my AVR (Dennon 3311) to 5 channel stereo for pure music listening.
