    The key is it has to be at temp long enough to break down connective tissue... this starts happening at 195ish, but takes some time. I keep the smoker around 235°. Once it gets above 195°, I check evout every 40 minutes or so. You’ll be able to wiggle the bone loose when it’s ready.
    Enuf O yer bone wigglin talk, what happens at the barbecue pit stays at the barbecue pit.

    I see probes and what I assume to be phone status of grilling temps. What probe thermometer do you guys use and recommend? I am working on my Christmas list for my wife and it would be a good thing to add.

    Just a plain NG. WEBER 3 burner Genisus.
    The BBQ gurus/flameboss controllers won't work on anything but wood/charcoal airtight smoker type units like Big green eggs, weber smoky mountains, ugly drum smoker's, etc. They are basically a temperature controller and fan to increase or decrease combustion air to regulate temperature.

    My drum smoker will run fine over night and hold temp pretty evenly, but I would love to get one of those controllers just for the peace of mind.
