I'm currently 4 weeks away from finishing up my Bach Degree at a private college in central IN. They too have a no weapons policy. I carry to class though I do remove it from my person. In the parking lot before I head in (I'm a commute student) I take off the holster (leaving my weapon in the holster) and put it in my backpack. I've had several occasions where my cc would have been made during a class for whatever reason (just as you mentioned), so I was happy to not have it on my person. I know that having it in my backpack makes my response time much greater than on my hip, but at least I've still got it with me. My backpack sits between my legs if I'm sitting, and on my back if I'm moving so I don't worry about others taking my bag. It's just what works for me, to each there own.
